Saffron-Pistachio Chia Pudding



Chia seeds are know for it's health, full of fiber, protein, omega fats, calcium, and mangesium. I love making this pudding as a delicious and healthy alternative to Indian Kesar Pista (Saffron Pistachio) dessert. Super easy to make and enjoyable to indulge!


Ingredients, 2-4 servings


  • 2 1/2 cups organic milk of choice (light coconut milk or almond milk works great)

  • 1/2 cup chia seeds

  • 1/2 tablespoon maple syrup

  • 1 1/2 tablespoon grounded pistachios

  • ¼ teaspoon cardamom

  • 3 generous strands of fresh saffron

  • ⅛ teaspoon sea salt

Method


  1. Combine in order in a lidded glass mason jar: milk, chia seeds, maple syrup, saffron, cardamom, grounded pistachios, and salt. Stir with a spoon until well blended. Cover and shake to combine. Chill for 30 mins to 1 hour, then give it a good shake again.

  2. Chill overnight in the refrigerator to allow the ingredients to set. Ready to eat next day!


Toppings, optional

Goji berries, unsweetened cocao nibs, coconut flakes, pistachio
