Kaira's Good For You Tofu

A savory summertime or anytime protein forward, light, satisfying main dish. Kaira loves the savory sauce that makes this dish pop with flavor! Pair it with a side salad to make it a complete meal. Rich in source of essential minerals, amino acids, B-complex vitamins, and aids in regulating blood sugar levels.


INGREDIENTS.

  • 1 block of sprouted organic tofu.

  • 1/2 cup organic black lentils or French lentils

  • 3-4 organic celery stalks, chopped thin, bite sized

  • 1 tbsp organic toasted sesame oil

  • 1/8 tsp salt (add to taste)


DIGESTIVE SPICES

  • 1 tbsp organic sesame seeds

  • 1-2 tsp organic ground cumin powder

  • 2 tsp peeled and finely minced fresh ginger

INSTRUCTIONS:

  • squeeze and drain the water from tofu really well.

  • whisk in a bowl - 1 tbsp sesame oil, digestive spices, and salt.

  • cut the tofu into 1/2 inch thick squares. place into the marinade, set aside for 30 mins.

  • rinse the lentils well and cook to the package instructions. preferably al dente.

  • strain lentils into a bowl to remove any water. add the celery, salt and pepper to taste.

  • in a non-stick pan over medium heat, add the tofu with a fork or tongs from the marinade to fit the pan. when sides start to get crispy, flip to other side until desired crisp. add drizzle of the marinade into the pan, if needed to keep from sticking.

SAVORY SAUCE

  • 1/2 cup organic unsalted creamy peanut butter (or almond, or sunflower butter)

  • 2 tsp coconut aminos

  • 1 tsp organic maple syrup

  • 1/2 tsp hot sauce or red pepper flakes (adjust heat to your preference)

  • 1 small lime squeezed

  • pinch of Maldon seasalt and fresh ground pepper to taste

  • few dashes of hot water to thin out as needed

PLATING

  • In a bowl or dish, place the lentils as desired.

  • drizzle with generous amount of the savory sauce.

  • assemble tofu over it. Eat while it's warm. Enjoy!
