This is a vibrant simple soup ideal for cleansing and improving digestive health without compromising taste. Full of fiber and vitamins too.
INGREDIENTS. Organic 3-4 servings
6 medium carrots
¼ cup of brown rice
1 tbls olive oil
1 tbls. fresh ginger or 1/2 ground powder
1 small bay leaf
¼ tsp dry thyme
salt & pepper to taste
½ squeeze of small fresh lemon
3 cups of water or fresh vegetable stock
Digestive spices
Ginger, black pepper, thyme
Method
Rinse the brown rice until the water turns clear. Drain the water.
Rinse, light peel, and chop the carrots into 1 inch pieces.
In a saucepan, heat olive oil over medium heat, toast the brown rice for a couple minutes.
Add the carrots, ginger, thyme and bay leaf.
Salt and pepper to taste and stir until all ingredients are well combined.
Add the water or stock.
Cover with lid slightly ajar.
Let it boil on low-medium heat for 25 mins.
Puree in an upright or hand-held blender
